BIT is Telluride’s go-to for to-go. Grab a breakfast bagel, burritos, savory croissants, the classic knish or treat yourself to a sweet delight from the baked goods display case. Or, stay and enjoy lunch or dinner in our ample dining room or people watch from the porch.
Generous deli sandwiches are made on bakery breads, including the rich Reuben or Pastrami on authentic Jewish Rye. Pizza slices are ready in a minute or give us 20 minutes for a made-to-order pizza on sourdough wheat crust. Our Italian pasta machine produces fresh semolina pastas, and our Mexican offerings are home-style and served with organic tortillas.
The Bakery’s story began in December of 1976 when partners Jerry Greene and George Poulos began by baking bread and bagels for wholesale in a beat-up old warehouse on South Fir. Over 40 years later, this Telluride tradition is still going strong, committed to quality ingredients, like sourcing best-in-class Grande mozzarella and proudly working with regional producers to provide fresh, sustainable produce. Today B-I-T offers modestly priced, hearty fare with an eclectic menu. Daily dinner specials include the famous Thanksgiving Dinner every Thursday.
